Publish a full-season offer and a single-date offer against the same stalls. Availability stays correct across both because a stall-date can only sell once.
Vendors pay online at checkout or after you approve them. Stall fees land in your Stripe account, and each week's paid/unpaid status is visible per date, not just per vendor.
One public application page keeps taking submissions as the season runs, with a deadline if you want one. Waitlist the vendors you are not ready to seat, collect insurance and permit documents on the form, and approve straight into a specific stall and dates.
